Is copper safe to cook with?

Yes! Copper is 100% safe to cook with so long as it’s lined with a non-reactive metal, such as tin. Unlined copper cookware is also fine so long as you are not using acidic ingredients, like tomatoes or vinegar, which can break down the copper. In fact, unlined copper is quite common in Italy, traditionally used to prepare polenta or eggs.

Why is copper ideal for cooking?

Copper has one of the highest rates of heat conductivity of any metal used in cookware. For example, it conducts heat 5 times faster than cast iron and 25 times faster than stainless steel.  That means copper cooks more efficiently, requiring a smaller amount of energy to effectively heat a pan or pot. Also, the heat is uniformly distributed across the surface of your cookware, eliminating hot spots and ensuring your food cooks evenly every time.

How long will copper cookware last?

With basic care, copper cookware can last generations, without losing a bit of its beauty or performance. The outside of your copper cookware will develop a patina over time. While many cooks prefer this look, your copper can be easily polished so that it retains its bright, shiny exterior. While the tin lining will last for years, your copper cookware will need to be sent off for re-tinning every so often. When it returns, it will look and perform just as it did the first time you used it.

Why Is Our Cookware Tin-Lined?

Unless you’re preparing exclusively non-acidic foods, copper cookware must be lined to ensure safety. Tin’s natural non-stick properties and its extraordinary energy efficiency make it the perfect partner for copper. That’s because both copper and tin heat up very quickly and distribute heat evenly, eliminating hot spots. Other linings, such as stainless steel, actually slow down the heating process, wasting energy and leading to less than perfect results. Plus, tin linings are easily replaced, so your copper cookware can maintain its world-class performance for generations.

Navarini Copper

Trentino-Alto Adige, Italy | Coppersmith

Master coppersmith Pierino Navarini began learning his trade in 1949. Seventy years and three generations later, his family’s melding of traditional, labor-intensive techniques with modern design have made the Navarini name synonymous with exquisite copper craftsmanship.

And that reputation, built upon an unwavering loyalty to classical methods and a refusal to take shortcuts, has been hard-earned: each piece is hammered exclusively by hand, every design conjured with a mallet and chisel, and every lining is deftly applied over an open flame.

Today, while their copperware can be found in elite eateries around the world, Navarini’s greatest satisfaction comes from knowing their products have been used in a family kitchen, just as they have been used in their home for decades.
